Double Chocolate Rice Krispie Squares for Inexplicably Blue Days
Once in a while, even the most cheerful girl is entitled to feeling inexplicably blue. And on such days, when life calls for chicken soup but there is no time to make it, sunflowers but your favourite florist is closed, a new sparkly bauble but your pocketbook vetoes the purchase… a girl can always whip up rice krispie squares.
There’s just something about Snap, Crackle and Pop that bring even the most reluctant smiles to my face. Maybe it’s the fact that a girl can always count on those three little guys to show up, cheery little kitchen soldiers, at your service in your local grocery store aisle. Maybe it’s because they pair so perfectly with melted marshmallows and a topping of white and dark chocolate.
But mostly it’s because rice krispie squares are portable and so easily shared with a favourite sister who lives just down the street, even at 9:30 at night on an inexplicably blue day.
Because rice krispies with a favourite sister turn inexplicably blue days into inexplicably blessed days in no time.
{RECIPE} DOUBLE CHOCOLATE RICE KRISPIE SQUARES
{MAKES} one 9 x 13” pan- more than enough to share with a favourite sister
{INGREDIENTS}
3 TB butter or margarine
4 C miniature, fresh, fluffy marshmallows (OR 1 package (10 oz., about 40) regular marshmallows)
6 C Rice Krispies
2C white chocolate chips
1C mini chocolate chips
1+ sister or friend with whom to share
{DIRECTIONS}
{For Rice Krispie Squares}
one. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
two. Add Rice Krispies cereal. Stir until well coated.
three. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with butter.
{For Double Chocolate Topping}
four. In a metal bowl set over a boiling pot of water, melt 2C of white chocolate chips. Remove from heat. Using spatula, and spread over rice krispies.
five.Immediately sprinkle with 1C of mini chocolate chips. Use spatula to spread over white chocolate chips, making tantalizingly messy topping.
six. Cool. Cut into 2-inch squares. Best if served the same day.
store. No more than two days at room temperature in airtight container. To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before serving.
